How do market prices work excatly?

The ECONOMY.TXT file in Dav's OC Mod looks like this;

As a test, I doubled the coal sell values of 11 12 13 to 22 24 26

This did double food and wood purchased for 100 coal from 66 to 132, stone from 100 to 200 , iron and coal from 33 to 66 and gold from 13 to 26.

But I still can't understand exactly why it did this. How do the numbers 11 12 and 13 and then 22 24 26 relate to the old and new amounts purchased? I can't really see a pattern other than the doubling. What I mean is, if the numbers in the ECONOMY.TXT file were percentages then I would understand them. But 11 gives 66% and 22 gives 134%. Where does the hidden factor of 6 come from? Then 12 gives 33% and 24 gives 66% (if I am lining up values right).

Hope I have explained my question and my puzzlement properly. Exactly how do these buy and sell numbers make sense?
